Growing up, one of my favourite things to eat was macaroni and cheese. Fun fact: I would eat a box of Kraft Dinner for breakfast every chance I got. 

Thankfully, as I grew older, I became more health conscious and would save the blue boxes for special occasions - like when I was a starving student and it was on sale for 50 cents a box. That was indeed a special occasion. 

Since I'm not a college kid anymore and have more time to make nutritious decisions, I decided to take my love of macaroni and cheese to the next level: vegan, but still delicious. Dare I say, more delicious? Did I mention it's super easy to make??

I was only familiar with making a vegan alfredo sauce (I'll have to post about that one day too!), so I went from that.  I played around with a few recipes, but nothing ever really tasted convincing. Then I added nutritional yeast flakes. Oh boy! Was that ever a delight! 

Since then, it's been a family favourite. My husband thinks its the bomb dot com (and tells everyone about it), and I rather enjoy it as well. Actually, I even like it better than the real stuff; It tastes way better, AND there are less guilty feelings when I go for seconds.

It's so creamy and dreamy and delicious. We love it especially with some roasted kale on the side. Yum! Try it out and let me know what you think - I need to stop writing before I get hungry!

Creamy & Dreamy Vegan Macaroni & Cheese

what you need:

  • 2 small yellow potatoes, peeled, chopped

  • 1 large carrot, peeled, chopped

  • 1 small onion, large wedges

  • 1 garlic clove

  • 1/2 cup cashews

  • 2 tsp sea salt plus extra to taste

  • 3 TBSP nutritional yeast flakes

  • Dash of Dijon mustard to taste (optional)

  • About 4 cups cooked macaroni
     

what to do:

1) Boil water in a medium pot. Add carrots and potatoes and cook for 7 minutes. Add Onion. Cook until everything is soft.

2) Once everything is done, add vegetables to a blender along with cashews, garlic, and the water from the pot (about a cup and a half)

3) Add salt and nutritional yeast flakes and blend until smooth.

4) Pour over prepared pasta and mix well.

5) Serve. Optional: garnish with parsley and bread crumbs (or even fried onion!).
